Recipe: Oatmeal Coconut Breakfast Smoothie

The school year is coming which means busy mornings! Here’s a great breakfast option for you or your kids that my friend Leslie makes. I like to combine this with a hard boiled egg to sustain me through the morning. Both are easy to grab and go!

Feel free to mix up the milks, fruit and measurements you use!

Oatmeal Coconut Breakfast Smoothie

♦ 1/4 cup dry oats (any kind will do)

♦ 1 cup milk (I use unsweetened vanilla almond/coconut)

♦ 1/4 cup plain greek yogurt

♦ 3-4 frozen Peach slices (fresh work too!)

♦ 3-4 fresh Strawberries (frozen work too!)

♦ 1 tbl chia seeds

♦ 1-2 tbl unsweetened coconut

Add all in a blender and whip it up!

    quick oats or old fashioned?

    if using frozen fruit, do you need to thaw first?

    what are chia seeds? can you substitute ground flax seed?

    does this recipe make a single serving?

  3. Mmmm sounds good! Race day is Sept 14th and I ran my first 10K on the treadmill the other night (1hr 20mins). I have a few long training runs before the race coming up so I’ll have to try this out! Thanks!!

  6. This is so good and filling. Thanks for sharing this recipe! I imagine you could add a scoop of vanilla flavored protein powder to increase the amount of protein in the shake too. I didn’t have chai seeds on hand so substituted ground flax seed instead.

  7. Do you think it’s possible to make this at night and then re-blend in the morning?! I have another smoothie recipe I make that calls for chia seeds and the instructions have you make it the night before, mainly because the chia seeds expand to make it thicker.

    Thoughts?

  8. Don’t the enzymes in yogurt affect the nutrients in the fruit?
